Sushi is ranked number 2 on the list of 75 best foods around the world, as published in a 2020 article by Far and Wide. It is safe to say that Singaporeans love it. Snaking lines are often spotted at the latest sushi bars, even on weekdays. There is one in particular that piqued my interest and it is none other than Genki Sushi.

Genki Sushi is the first restaurant chain in Singapore that operates and delivers sushi through the “Kousoku Express” system. It allows customers to order sushi from mobile devices and receive their orders through a speedy double-rail system. As this concept was relatively new to me, I decided to head down to its outlet at Plaza Singapura to find out why it was so raved about.

I was greeted by animated chatter and boisterous laughter when I stepped into the restaurant. People from all walks of life were tucking heartily into platters of sushi. The white and yellow decor, together with bright lighting, further emphasised the upbeat and cheerful atmosphere.

The first thing I noticed upon arriving at my seat were the sleek, metallic ‘train tracks’ that stretched across the entire length of the counter. Intrigued, I watched a train-like gadget carrying plates of sushi cruising down the ‘track’ and stopping at the table nearest to me. Once the diners had collected their food, the ‘train’ automatically retreated to the kitchen.

Now that I knew how the system worked, I was eager to try it out for myself. The ordering process was fuss-free — I simply had to download Genki Sushi’s app and select the types of sushi I wanted through their e-menu. I was pleasantly surprised by the wide variety of food available, including sashimi (raw fish), maki (sushi rolls) and karaage (Japanese fried chicken).

I felt like a young child again, enthralled by the process of collecting my food when the ‘train’ glided to a stop at my table. This ensures the freshness of the sushi as they are delivered straight from the kitchen. Not only that, this contactless service system is much more hygienic, which is important in the midst of the Covid-19 pandemic. I was highly impressed by the service I received, which is unlike any other.

Picking up my chopsticks, I dug into a small basket of soft-shell crabs. They were cooked to perfection, golden brown and crispy, infused with a fragrant aroma. I was delighted by the burst of flavour that danced across my tongue the moment I placed one in my mouth. The rest of the dishes were equally delectable.

Over the course of my meal, I marvelled at how Genki Sushi makes innovative use of technology to provide customers with an unforgettable dining experience. Their ‘train’ system puts a refreshing spin on the conveyor belts usually used at sushi restaurants. Not only that, Genki Sushi offers scrumptious food at an affordable price. I will definitely want to visit again, this time with my family and friends!
